Txakoli de Alava, Basque Region, Spain
This wine, from the Basque region at Spain’s northern boundary, grabbed my attention the first time I tried it. Dry, with vibrant acidity and a touch of spritz from added carbon dioxide, it’s extremely refreshing.
Pronounced Chacoli, the zesty wine is made from two native grapes I had never heard of — Ondarrabi Zuri (90 per cent) and Ondarrabi Zuri Zerratie. Hand-harvested from organically grown vineyards, the wine is fermented in stainless steel before being bottled.
Extremely fresh with bright acid, look for flavours of lemon, lime, grapefruit, beeswax and a bit of pie crust. This is made for a warm day on the patio. It is definitely worth trying.

Drink: Now. Enjoy it with shellfish, sushi or roast chicken. It would also be a great aperitif. Cork; 12.5 per cent alc./vol.
