“You’re going to get better quality and more originality when you go to a small, local spot,” says Alexia Gawlak, chef/co-owner of Swine & Sons, which is very local but not quite as small as it used to be since branching out into beloved area watering holes Will’s Pub in Orlando and Tuffy’s Bottle Shop in Sanford. “Generally speaking, small mom-and-pop-type places are run with more care and attention to detail...” There’s a little devil in the details of Swine & Son’s exceedingly popular hot chicken, which employs boneless Bell & Evans thigh meat that’s brined, buttermilk-soaked, dredged in flour and fried crisp. But there are newcomers to the chicken sandwich roster here. “The Golden ‘Q’ is a Southern-inspired, crispy chicken-meets-barbeque mashup of fried, brined and smoked dark-meat chicken dressed with our house-made Tangy Gold Barbeque sauce, bacon, B&B pickles and pimento cheese all on a buttered Olde Hearth bun.” She didn’t drop a mic after that, but you know you heard it.
